



We all know there has been a significant rise in obesity and disease in the world over the past 100 years, especially the past 25 years. You have also probably heard a lot of noise about “gluten” or wheat being part of the problem.
In a recent article I read by one of my instructors, Dr. Mark Hyman, he lists the three hidden ways wheat makes us fat. Yes, gluten is a problem (along with the sugar it produces), but it isn’t the only problem with wheat. There are three hidden reasons why wheat products are a major contributor to obesity and many major diseases such as diabetics, heart disease and depression.
According to Dr. Mark Hyman’s research, the new modern wheat we are eating is different in three important ways. These ways all drive obesity and chronic diseases.
1. It contains a Super Starch – amylopectin A – that is super fattening.
2. It contains a form of Super Gluten that is super-inflammatory.
3. It contains forms of a Super Drug that is super-addictive and makes you crave and eat more.
The history of creating and manufacturing a “modern” wheat that is economically friendly to grow and process, parallels the history of obesity and chronic disease. Over the past 50 years, the wheat we have lived on for thousands of years has been engineered into a product that makes you fatter and sicker.
This new modern wheat is a newer version than what our grandparents ate. This new wheat is a dwarf wheat that has much higher amounts of starch and gluten and many more chromosomes coding for all sorts of odd new proteins. The person who engineered this modern new wheat won the Nobel Prize because it promised to feed millions of starving people. It has, and now we are fatter and sicker from it.
The downside is that two slices of whole wheat bread now raises your blood sugar more than two tablespoons of table sugar. There really is no difference between whole wheat and white flour anymore. For people with diabetes, both white and whole grain bread raise blood sugar levels 70 to 120 mg/dl over starting levels.
I know from my studies and my experience with my clients that foods with a high glycemic index make people store belly fat, create inflammation in the body, and give you a fatty liver, which leads to chronic diseases. I have seen tremendous results with my clients when they learn how to manage their blood sugar so they can enjoy the foods they like and keep the cravings away and the pounds from coming back.
Not only does wheat contain super starch and super gluten, making it super fattening and super inflammatory, but it also contains a super drug that makes you crazy, hungry and addicted.
According to Dr. Hyman, when processed by your digestive system, the proteins in wheat are converted into shorter proteins, “polypeptides”, called “exorphins”. They are like the endorphins you get from a runner’s high and bind to the opioid receptors in the brain, making you high, and addicted just like a heroin addict. These wheat polypeptides are absorbed into the bloodstream and get right across the blood-brain barrier. They are called “gluteomorphins” after “gluten” and “morphine.”
So could wheat be causing problems with your weight or your health? It is certainly something you need to consider. For some, it is best to stay away from it completely: for example, if you suffer from celiac disease this is your best option because of the severe symptoms of the disease. For the rest of us, it’s not easy to say what is the best option for us and how little or how much we should be eating.
The first step is to understand how wheat or most foods are affecting you. The second step is to know your boundaries and create a system that allows you to lose weight, feel better, and stop living on a diet.
